Law Grad Turns to Cupcake Truck as Economy Sputters

Studying at New York Law School helped prepare Lev Ekster for his next career, albeit not the one he was expecting.

During his many study breaks at a downtown bakery, it occurred to Ekster to wonder “Why can’t a cupcake come to me?” From that moment of inspiration, a post-law school business was born, reports CNN.

His van, entitled the Cupcake Stop, officially debuts June 3. In addition to a varying choice of cupcakes that will include strawberry shortcake and psychedelic tie dye, depending on the day, it will also offer gourmet coffee and other drinks 24/7 to a mobile city that is always on the go. Ekster is encouraging potential customers to use Twitter to pinpoint the van’s location.

As a law student, Ekster eventually realized that he couldn’t be the only one unhappy with having to commute to get a cupcake that wasn’t even particularly to his taste, recounts Serious Eats New York.

“When the legal market started bottoming out,” he says, “I realized that it was the time to act.”
